Hello all,
I'm sorry for leaving all of you hanging, but I hope that this post makes up for it...just in time for breakfast!Let me just say that I am NOT one of those people who cannot eat anything heavy in the morning. Coffee and toast will not cut it for me. I have been known to reheat leftover dinner at ten in the morning for breakfast, and one of the best meals that I have ever eaten at a restaurant was the steak and eggs brunch at Cafe Orlin in the Village...but that's a topic for a later post.
So like I was saying, breakfast is a big deal for me. And when I'm craving protein, there is nothing better in the world than a huge, fluffy omelette (below right).
This was exactly the case a few months back, when I awoke after sleeping over a good friend's house. I knew that it was one of those days where neither cereal, tea, nor a bagel, or even pancakes would not be enough to satiate my hunger.
In a trance, I made a beeline for the fridge. I found tortillas, three kinds of cheese and tomatoes, but I wanted something more...substantial. Suddenly, my stomach cried out when it discovered that the "secret ingredient" for which I was looking was indeed in stock: EGGS!
I gasped aloud. "That's it!"
When B. peered into the kitchen, she knew that I was about to throw down. "You know, there's spinach in the freezer," she casually mentioned while she typed away on her laptop. "...And maple sausages," she added as an afterthought as I scrambled (pun intended) for the refrigerator door.
So a veggie omelette it was! Three kinds of cheese (queso fresco, feta and cheddar), spinach, grape tomatoes, garlic powder, onion powder, salt and pepper were incorporated into the breakfast behemoth, accompanied by several maple (is there any better flavor?) sausages and a fresh tortilla. It came out better than any of us expected, like a huge patchwork quilt of morning goodness, and was big enough to split between the three of us.
Luckily, we had A's new camera readily available to take the fantasic photos in this post before we ate.
So there you have it, a bonafide breakfast of champions. Part protein, part veggies, part dairy, and all tasty.... mmmm MMMM mmmm!

ReplyDeleteThanks, Jimmy! I loooove eggs, especially omelettes... actually, I didn't! I don't want to use her name without her permission, but "she-whose-name-begins-with-an-A" who also has a fly camera took the pics. hint hint lol.
